Valerie’s Roast Beef
Beef Pot Roast is a favorite in our family and an absolutely perfect choice for any gathering. This recipe is one I came up with many years ago. It’s not fancy, but it’s a winner and it’s pretty much foolproof.
You can easily make it a couple of days ahead and just re-warm when you’re ready to serve. If you need to double it, it works out just as well, just may need to add some cooking time. I can’t think of anything that smells more inviting than a pot roast in the oven…oh, the aroma!
And might I add– the leftovers are just as delicious. We love it served with traditional sides of southern green beans, fresh corn off the cob, mashed potatoes for the gravy and warm fresh yeast rolls or biscuits, and of course a slice of pumpkin or apple pie!
Hatch Chile Mac & Cheese
I wanted to share my favorite Hatch Chile Mac & Cheese recipe with y’all. This is also my family’s go-to mac & cheese recipe, with or without the chiles. It’s baked southern style and creates a rich, custardy, creamy delicious dish with a fabulous crunchy topping. We serve it as a side but you could easily make a meal of it! It’s THAT GOOD!
Texas Hill Country Peach Pie
This recipe was adapted from one that I received from my sweet hippie soul sister from the Texas Hill Country, Gigi.
On a recent visit, she was telling me about this recipe where the pie doesn’t overflow with liquid when you slice it AND that she doesn’t peel the peaches.

Fudge Pan Lining Tip
When baking things that need to be removed from the tray after baking I generally use parchment paper with extended handles. The parchment paper, with extended handles, really makes for easy removal and allows you to lift the finished bake from the baking sheet without burning your hands, and makes it easier for cutting etc.
To better describe what I mean I have gone the easy way and just took a couple of photos which I think are self-explanatory.
